I made a quick, yummy, and healthy meal the other night that even my kids enjoyed.
I cut up a potato, zucchini and some onion. I tossed them in a bowl with olive oil, salt, and pepper. Then baked them on a cookie sheet for about 25 minutes at 450 degrees.
After they were roasted, I grilled them in a tortilla with cheese to make a balanced quesadilla.
