I have some very good crockpot recipes if anyone is interested. usually the ingredients are not pricey and there's leftovers. Here is one of my faves . . .
Lemon Garlic Chicken
2 lbs. boneless, skinless chicken breast halves
1 tsp. dried oregano
1/2 tsp. seasoned salt
1/4 tsp. pepper
2 Tbsp. butter or margarine
1/4 cup water
3 Tbsp. lemon juice
2 garlic cloves, minced
1 tsp. chicken bouillon granules
1 tsp. minced fresh parsley (optional)
Combine oregano, salt and pepper, and rub into chicken
Brown chicken in butter in a skillet
Place browned chicken in crock pot
Put water, lemon juice, garlic, and bouillon granules in skillet. Bring to boil
Scrape all of browned bits and pour over chicken
Cook on high 2-2.5 hours or low 4-5 hours.
* if using parsley, add it at the end, baste chicken, recover then cook additonal 15-30 until chicken is tender and cooked through
SERVES 4
Also, one of favorites dinners of all time. Kids love this!! Here's what you need:
1 lb. box penne pasta
1 jar of your fave marinara sauce ( I LOVE and swear by Classico Cabernet Marinara)
1/2 lb. cubed mozzarella cheese
1/2 lb. thinly sliced mozzarella cheese
1/4 cup grated romano cheese
1/4 cup grated parmesan cheese
salt and pepper
Salt the water you'll be cooking the pasta in.
While pasta is cooking, preheat oven to 400 F. Make sure pasta is not overcooked and flimsy. I cook it about 1 minute less than the lowest recommended time.
When it is done, drain it and pour it into a big mixing bowl, adding the jar of sauce, the cubed mozzarella, and the romano cheese. Season with pepper.
Toss the ingredients until everything is well coated, then transfer to an oiled 9 x 13 baking dish.
Layer the slices of cheese on top of the pasta , sprinkle with parmesan, and bake for about 30 minutes, until the cheese starts to brown and get bubbly. Voila, you have a hot DELICIOUS baked pasta dish that make awesome leftovers for up to 3 days.
